Njaanuary recipe: How to make Ugali with sautéed cabbage and scrambled eggs


TikToker, Dennis Ombachi has generously shared the ideal recipe to tackle the infamous ‘Njaanuary’ month, known for budget constraints after the festive season.

The self-taught chef opted for a delightful Ugali cabbage and eggs dish.

Sharing the step-by-step preparation on his social media platforms, Ombachi expressed his excitement, stating:

“As promised, here’s cabbage & Ugali mayai for Njaanuary making its 1st of many appearances.”

He further disclosed his personal touch, omitting tomatoes in the cabbage

He also asked his fans what other Njaanuary meals he should prepare this month.

Here is a recipe for Ugali with Sautéed cabbage and scrambled eggs:

Ingredients:

For Ugali:

  • 2 cups maize flour.
  • 4 cups water

For Sautéed Cabbage:

  • 1 medium-sized cabbage, thinly sliced
  • 1 onion, finely chopped
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

For Scrambled Eggs:

  • 4 eggs
  • Salt and pepper to taste
  • 2 tablespoons milk (optional)
  • 1 tablespoon butter or cooking oil

Instructions:

1. Prepare Ugali:

  • In a separate pot, bring 4 cups of water to boil.
  • In a bowl, mix the maize flour with a little cold water to form a smooth paste.
  • Slowly add the maize paste to the boiling water, stirring continuously to avoid lumps.
  • Continue stirring and gradually add the rest of the maize flour.
  • Reduce the heat to low and let it cook for about 15-20 minutes, stirring regularly until the ugali is firm and well-cooked.
  • Once ready, remove from heat and let it sit for a few minutes. Shape the ugali into a round mound using a wet spoon.

2. Sautéed Cabbage:

  • In a large skillet, heat 2 tablespoons of cooking oil over medium heat.
  • Add finely chopped onions and sauté until translucent.
  • Add thinly sliced cabbage to the skillet and continue to sauté until the cabbage is tender but still has a slight crunch.
  • Season with salt and pepper according to your taste.
  • Remove from heat and set aside.

3. Scrambled Eggs:

  • In a bowl, crack the eggs and beat them well.
  • Add a pinch of salt and pepper to the beaten eggs. You can also add milk for creamier scrambled eggs (optional).
  • In a separate pan, melt butter or heat cooking oil over medium heat.
  • Pour the beaten eggs into the pan and stir continuously with a spatula until the eggs are fully cooked but still moist.

4. Serve:

  • Place a generous portion of ugali on a plate.
  • Serve the sautéed cabbage on the side or over the ugali.
  • Top with a serving of scrambled eggs.
  • Garnish with additional salt, pepper, or your favorite herbs and spices.
