CNN journalist, Larry Madowo and host of African Voices Changemakers, has become an unexpected influencer for the street food delicacy “Rolex” during his recent trip to Uganda.

Madowo took to Twitter to express his newfound obsession, stating:

“I’m obsessed with Ugandan rolex,” and playfully adding, “Of course, I eat my rolex with nyanya mbisi (raw tomatoes). Do I look like a savage to you?”

It appears that every time Madowo visits Uganda, indulging in this local treat has become a tradition for the influential journalist.

In Kampala, Uganda, Rolex is not a luxury timepiece but a popular street snack consisting of a vegetable omelet wrapped in a chapati.

The dish cheekily shares its name with the renowned luxury brand.

In honor of Larry Madowo’s affinity for Rolex, here’s a quick recipe to recreate this delicious snack.

Chapati Rolex Recipe:

Ingredients:
– Leftover chapatis from dinner
– Cooking oil
– Capsicums (hohos)
– Onion
– Chives, spring onions, or cilantro (dania) leaves
– Eggs
– Sea salt & black pepper

Instructions:
1. Dice capsicums (hohos) and onion. Chop chives, spring onions, or cilantro (dania) leaves.
2. Heat oil in a pan, add diced capsicums and onion, cook for 3-4 minutes. Add spices, season with salt & black pepper. Set aside to cool.
3. Whisk eggs, season with salt & black pepper. Add cooked capsicums and onion to the egg mixture.
4. Heat a pan on low heat, add half of the egg mixture, place a chapati on top. Cook for 2 minutes until the egg is cooked through.
5. Flip to heat up the chapati, sprinkle chives, green onions, or cilantro, then fold into a roll (rolex).
6. Repeat for the remaining egg mixture and chapati. Slice and serve with tea, coffee, or your preferred accompaniment.
